They don't serve a real "security" purpose any more. Its just an easy, clear and quick way to refer to each person in communications. Their radio transmissions are all encrypted now anyway (they didn't used to be, when these were originally implemented). The code words are words that otherwise wouldn't be used as nouns, and they are quicker and clearer to say than their actual names.
