I believe herpes is the only std that is NOT curable.  Gonorreha, Syphilis, Chlamydia, et al are all curable.  A simple antibiotic like doxycycline or cipro would kill Gonorreha or Chlamydia, more intensive treatment is needed to cure syphilis.  Crabs are also curable, a simple variant on head lice.  What std's am I missing?

Aids, Warts and Herpes are the only uncurable ones or at least that's what we learned back in good ol' high school.

Yes you are right, those three are incurable because they are viruses and not bacteria like gonorrhea, chlamydia and syphilis etc that are treatable with antibiotics. Though those other three are a bit controllable, you can't fully get rid of them as of now.

Hepititis isn't considered a "STD". But you're right.

Syphilis can kill you too if you let it go long enough untreated.
