Happy Thanksgiving 🦃 

I am picking up a crown roast of pork (uncooked) which my better half will apply an herbed rub, bake and fill the middle with a delicious sausage stuffing. 

She also is making roasted butternut squash soup and sausage and ricotta filled stuffed shells.

I will be making mushroom risotto.

Also some appetizers and other veggies and potatoes to truly stuff ourselves before hitting the desserts.

Hope all here enjoy a wonderful day with family and friends.

@wegner are you doing the risotto on the stove top? With all the other dishes I can't imagine standing there for forty minutes cooking the risotto. Which by the way, I'm a huge fan of.

Yep stovetop....let's me add some labor to the meal....plus I get to enjoy a beer while also not having to entertain my in laws. My wife suggested my risotto so I jumped at the chance.

Hmm, that's next level genius. I'm always looking for something to contribute off my smoker, Blackstone, or grill for the peace and quiet. The kitchen is always too crowded. 

This year we are at my in laws and I have pickleball and a pool to escape to.

I bought a 22 pound turkey from CostCo.  I salt brined this b**** for 2 days.  Now drying it out until I stuff it with fresh poultry seasoning, sliced apples, onions, and oranges.  Going to dry rub the outside with butter, garlic, pepper, and a little brown sugar.  Gonna cook it tomorrow morning on my outside propane grill.  Should take around 4 to 5 hours at 325 degrees.

Grandpa (my dad) makes fresh stuffing from bread, celery, egg, onion, seasoning, etc. and fresh cranberry sauce from frozen cranberries.  He also makes fresh mashed potatoes, gravy, and an awesome veggie salad and Hawaiian salad.

My 14 and 16 year old boys are going to eat so much they might puke.  Going to make sure they don’t eat anything tomorrow until 3 PM or so when Thanksgiving dinner is served.  🤣

That’s definitely a lot of work but a great excuse to crush several beers as you are “waiting” for things to cook.  🤣

After the initial massive turkey I am cooking, my dad and I are doing a pork roast and a smaller turkey breast and more stuffing for the rest of the weekend!

Kids are gonna gain 5 pounds this weekend.

Came out juicy as hell from the two day brine soak in the fridge.  This 22 pounder took about 4 hours on the propane Weber grill at around 325 to 350 degrees.

That looks real good. 

It was.  Super moist turkey.  Kids crushed it.  I won’t ever cook a turkey without brining it first.  I’ve done it the past two years and it has come out great both times.

Cool, White Sox. You obviously are a 'holiday guy' and love good food and family. You shoulda invited me over for turkey dinner! Kidding but your description of food makes me want some.

I love how many of us love to 'escape' from family at times at holiday gatherings. Not that we dislike 'em, but 'peace and quiet' sounds good sometimes. The best T-giving in Chicago IMO would be family there with plenty turkey, dressing (dressing is a southside word I believe, not stuffing), brown gravy, hot rolls, green bean casserole and whatever dessert you might want. ... I'm sure the most tolerable dinners would be those in which the guests drink a few beers. Back in the day we had some memorable dinners with uncles putting down beer after beer then capping the day/night with poker.
