I'm one of those people who feel veggies have no place on pizza, ever, and that includes black olives, which I love.

Sausage, mushroom, green pepper, and onion. I'll probably also toss a little extra oregano on top and ask for a small ramekin of pizza sauce to dip the crust. :cheers and plenty of beer.

 

Oh, and I probably should not even have to mention it, but living away from Chicago for so long I know I should, cut the damn thing in squares, not pie shape.

When I worked at a pizza place in Carbondale(Quatros) we would make our own pizzas in the back with stuff we brought in (chicken and broccoli pizzas, hot pepper pizzas, etc) and one time someone brought in anchovies and we made a pizza and I tried it.

 

 

That is the first and last time I will ever eat an anchovy (sp?) pizza. The fish oil makes the cheese gross, there is practically a pool of oil sitting on top of the cheese, it just makes the entire pizza gamey. Never, ever again. And I have yet to meet someone who likes an anchovy pizza

pepperoni and ricotta. Perfect combo of spicy and mild, if you can find a pizza place that even does ricotta.

 

ETA: Oh, and, sprinkle oregano on the pizza liberally as well.

There's no more oil in the anchovies than there is in sausage and pepperoni, however you made that pie you did something wrong.

 

It does give the pizza a rather strong taste, but it's a nice salty-fishy-oily flavor. I don't prefer anchovies on real Chicago pizza, but on the NY style pizza I'm stuck with down here anchovy and mushroom is a great pie.

My guess is they did not rinse, drain, and thoroughly dry the anchovies before adding them to the pie. Anchovies are the only pizza where I will opt for a different cheese. I prefer something with a slightly smoky flavor. I also prefer a little bacon tossed on top as well with the little fishes.

the anchovies were most certainly drained(not rinsed or dried) by the cooks, and there was most definitely more oil than there is in sausage and pepperoni. You can debate with me all day long, but I have seen and delivered thousands of pizzas, and the oil that came off of this pizza could have been poured in and filled up a cup.

 

 

diiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiisgusting. And I am pretty open to trying new food, this was just not right.

Well, considering nobody wanted it or ordered it, EVER, I can see why Quatros didnt have anchovies on the menu.

 

There are much better pizzas to be had :)

Smoked Mozz on a pizza is very underrated. It gives it a hint of smokiness that compliments the sausage.

I have had a few anchovy pizzas and cannot remember any of them be particularly greasy or oily.
