The evidence goes from the hospital, to police, to lab, back to police and to central evidence. Somewhere along that line someone would have to break a seal that was signed by a nurse/doctor then somehow get them to reseal it with the exact same seal with their initials and then put back into the chain prior to analyzation by the third party lab. Thats if you were really trying to change or tamper with evidence.

The question is who else could possibly either find a discarded bag, find a bag that was opened, or forged a bag with her name an DOB on it.
