Every time I have gone over 210 degrees I have been unhappy with how dry the ribs get, maybe i am doing something wrong. I dont mind the slow cook though. the house smells awesome

I wrap them in foil completely -- never dries them out.

I slow cook them in the oven at 200 degrees for about 4-5 hours. and baste them every couple hours with a apple cider vinegar/oil/chili powder mix. Then I finish them on the grill with sauce(usually sweet baby rays).

If i had a smoker i would use it, but i dont. I want a big green egg really bad though

You can smoke on a gas grill!

This website is amazing for all things BBQ.

This is my grill - love this unique color :D

My dad has that one, but his is like 15 years old. Still holds up well.

I have his old free standing red Weber. It was bought in 1978, and has no rust on it.

Its not a problem, type how you want to type. If you want, just type your sentences and dont worry about the width and let the site format it when you post

I need some suggestions for good Italian Restaurants in downtown Chicago.

We are very simple when it comes to Italian, we love spaghetti so any place place that has really good spaghetti is what I am looking for

Probably to late but just go to Eataly.

HRI is good but there are so many other options just as good its just depending on what part of town you are in.

Nuevo Leon has the best tortillas I have ever eaten.

Aurelios is right there with HRI.

And so is Phil's, Palermo's, Vito and Nicks....and the list can continue on for a while really.

I still say Pizzeria Uno/Due are the best, though Lou's is quite good. They put one in about 4 blocks from home. I'm amazed I don't weigh 400 pounds yet.

Nuevo Leon has been good the few times I've been there, though they were shut down by the health department fairly recently (since re-opened).

Best tacos I've had by a fair margin are at Paco's Tacos. They're delicious and huge.

Another favorite is Cemitas Puebla. There's one in Humboldt Park and one in the West Loop now. The Atomica Cemita is amazing.
