Urchin is a super unique taste. I try not to judge when people have a pallette that isn’t into slimy things, urchin is definitely in that group lol. Eel is such a different flavor, I love the umami sauce. And just fyi for Falstaff, eel is cooked. Not served raw, or at least when I have had it

American sushi is heavy on tuna/salmon. Every once in a while I will find a good alternate fish roll, but damn everything is a play on California and spicy tuna. Yellowfin is pretty awesome, I’m also a big fan of eel. Just love trying the different rolls when I get out to a actual sushi restaurant
